Buying Cashel Blue

Ideally with regards cheese generally we would recommend buying your cheese mature in small but frequent quantities, tasting the product before purchase and allowing it to warm to room temperature before eating. Depending on the seasonality of the milk, Cashel Blue will mature at different rates at different times of the year therefore we would urge you to follow your sensory skills, taste, sight and feel when selecting your Cashel Blue using the date stamp more as a guideline as distinct from a rule. Generally speaking bluer Cashel matures more quickly as does cheese with a more open curd (more air pockets). The subtle variations in the development of Cashel Blue relate purely to the handmade nature of our cheese and the changing seasons in the cow’s year. The curds that comprise each Cashel Blue are placed in each individual mould by hand underlining the idiosyncrasy of each individual wheel. As part of our comprehensive in house tasting of the product, Sergio and Sarah endeavour that each days production of Cashel Blue is closely monitored and released only at such time as favourable to the demands of the customer and the quality of the product.

Tasting is a subjective matter, and the character of Cashel Blue changes as it develops, some people prefer the fresh, tangy lactic flavours of a younger, firmer Cashel Blue while others prefer the creamy edged mellowness offset against the bite of the blue mould, as the product moves into middle maturity, a select few will opt for the extra mature flavours of a fully ripened Cashel Blue, 18 weeks plus, when flavours will become increasingly mushroomy, fudgey and spicy. All Cashel Blue passes through a slightly bitter stage of maturation as the blue mould develops and as the texture of the cheese just starts to soften down.

A BUYERS SENSORY GUIDE TO SOURCING SEMI-MATURE CASHEL BLUE

FEEL: Touch the packaged product between your thumb and forefinger, it should feel softish to soft around the edge

LOOK: If the product is wrapped in a transparent pack, check that the edge is creamy in appearance and that this creaminess is starting to spread though the portion. The appearance of the blueing in extra-mature Cashel can change from a grey/blue tone to a more green/grey shade.

TASTE: Ideally taste the product, remember Cashel Blue fresh from the fridge will taste firmer, hold the tasting piece in your mouth for a moment the texture of the cheese should lightly coat the sides of your palate, the flavour should be clean and balanced as distinct from the tangy and acidic flavours of youth.

MATURING CASHEL BLUE AT HOME OR IN THE SHOP

Portions greater than 300g can be matured on successfully in a home environment. A few simple guidelines to success are as follows:

Store in the refridgerator at between 2-5 degrees
Mature product on preferably wrapped in our original gold foil or alternatively aluminium foil but never cling film.
Ensure product remains fully covered to ensure cheese doesn’t dry out.
Whole wheels of cheese should be turned once a week to ensure an eveness of flavour.
Cut portions from main block and bring to room temperature when mature leaving main block wrapped and cool in the fridge.
