Smoked Haddock, Baby Spinach, Cashel Blue and Egg Pizza

Serves 2-4

  • 1 portion basic pizza dough
  • 150g fresh smoked haddock
  • 150g baby spinach leaves
  • 50g Cashel Blue cheese
  • 1 large free-range egg
  • Freshly ground salt and pepper

1 Preheat the oven to 210C/Gas 7.

2 Roll out the pizza dough until you have
a circle approximately 20cm in diameter. Leave to rest for 10 minutes.

3 Arrange the fish, spinach and blue cheese over the pizza, leaving a slight well in the centre.

4 Break the egg into the centre of the pizza and season well. Transfer to the oven and bake for 7-10 minutes.

5 Serve in wedges with a fresh salad.
