Inventive ways of using our blue cheeses

Cashel Blue® & Black Pudding Tapas

  • Cashel Blue® Cheese
  • Black Pudding (in chunks)
  • Red Peppers (roasted)
  • Bacon (grilled)
  • Egg (beaten)
  • Caramelised Red Onion
  • Pastry
  • Parsley and thyme
  1. Roll out the pastry into a sheet and cut out small circles with a pastry cutter. Place the cut pieces into a moulded baking dish.
  2. Add bacon, roasted red pepper, caramelised onion, Cashel Blue® cheese, black pudding chunks. Pour beaten egg over to fill up the little pie moulds, then add fresh herbs. Season well.
  3. Cook in the oven at 180?c for 20 minutes, remove and serve hot. Garnish with a little green salad, and enjoy with friends!
