Where our cheeses fit into the family of blues

People often ask us how our cheeses, Cashel Blue® and Crozier Blue, compare to other blue cheeses in terms of strength and taste. Here’s a rough guide of where our cheeses fit with some well known European blues like Cambazola, Gorgonzola, Roquefort, Danish Blue and Stilton, in terms of strength of taste, and also creaminess.

You see – Cashel Blue® is really not as strong as some people think! Crozier Blue is one step stronger – because it is aged for longer and also made with sheep’s milk. However, please rest assured that our blues are not going to blow your head off with tanginess (unless aged for too long by accidentally forgetting about them in a fridge!).
