Baked Chicory with Crozier Blue Sauce

We recommend also making a vegetarian version of this recipe, simply by not wrapping the chicory in slices of ham!

Ingredients:
- 10 whole chicory pieces
- 10 Slices Ham (optional)
For the Blue Cheese Sauce:
- 800 ml Cream
- 200g Crozier Blue Cheese
- 200g Shepherd's Store Cheese
- 2 cups finely sliced raw Chicory
- 2 cloves Garlic, crushed
- 70g Butter
- Pepper
- Nutmeg
Method:
- Heat half the butter in a frying pan, and fry the 10 steamed whole chicory pieces, until golden brown. Set aside to cool.
- In a saucepan, fry the raw sliced chicory with the garlic in the remaining butter. Grate in nutmeg and continue frying until soft.
- Pour in the cream to the saucepan, and add the Crozier Blue cheese. Stir so that the cheese melts and cook gently.
- When the sauce has reduced, strain the sauce through a sieve and set aside.
- Roll each of the whole fried chicory pieces in a slice of ham and place into a baking dish.
- Pour the sieved blue cheese sauce over the entire dish, covering everything nicely.
- Grate the Shepherd's Store sheep's cheese on top.
- Bake in the oven at 180 degrees celcius for 25 minutes until golden brown.
- Serve with a mixed green salad.
