Inventive ways of using our blue cheeses

Leek, Black Pudding and Cashel Blue Flatbread Pizza

Preparation time: 30 mins | Cooking time: 10 mins | Serves: 2

A homemade flatbread pizza with leeks, black pudding and Cashel Blue cheese! This is a super easy and satisfying pizza, and we find it’s a family pleaser on any night of the week.

We used these finest Irish ingredients:

• A readymade base by Pizza da Piero

• Buffalo mozzarella from Macroom Buffalo

• Pudding from Clonakilty Blackpudding Co.

 

 

Ingredients:

  • 1x Pizza Base (we used a da Piero pre-made base)
  • Olive Oil
  • Buffalo Mozzarella Cheese, sliced (we used Irish Macroom Buffalo Mozzarella)
  • 1 Leek
  • 1/2 Chubb of Black Pudding (Clonakilty Black Pudding)
  • 75g Cashel Blue Cheese
  • 40g Parmesan grated.

Method:

  1. Finely chop leek and fry in olive oil for 15 minutes, stirring occasionally, until soft and tender
  2. Meanwhile slice black pudding and fry in pieces for 8-10 minutes on a medium heat. Once cooked, remove and mash them with a fork to create a crumbly black pudding crumb.
  3. Lightly brush some olive oil onto your pizza base, and then add the slices of mozzarella evenly on the base.
  4. Next add a layer of the cooked leeks, followed by the crumbled black pudding. Break up the Cashel Blue cheese into chunks and sprinkle on top. Lastly grate the parmesan over the whole pizza.
  5. Bake at 220C  for 9-10 minutes until perfectly cooked, and leeks slightly charred on edge and crust ever so slightly browned.
  6. Serve and enjoy
