Inventive ways of using our blue cheeses

Raw Slaw with Cashel Blue®

  • 1 sweet Apple
  • 2 sticks Celery
  • 1 medium Celeriac
  • 1 lemon
  • 3 tablespoons Olive Oil
  • Honey
  • 125g Cashel Blue® cheese (in chunks)
  • handful of Dill
  • handful of Rocket
  1. Thinly slice the apple and celeriac, using a slicer or a sharp knife. Once you have the slices, slice them long-ways to make batons or matchstick pieces. (Alternatively you could use a julienne slicer). Finely slice the celery also. Add all to a large bowl.
  2. Add olive oil, and the juice of the lemon, the Cashel Blue® cheese, dill, rocket and 1 tablespoon of honey to the bowl and mix well.
  3. Season to taste, and add more honey if desired. Grate the zest of the lemon peel over as a final touch.
