Inventive ways of using our blue cheeses

Salted Caramel & Cashel Blue Tart

Preparation time: 1hr mins | Cooking time: 20 mins | Serves: 4

 

  • Shortcrust pastry Shells (bought, or make your own shortcrust shells)
  • 1.5 cups granulated sugar
  • 140g Salted butter
  • 1/2 cup heavy cream
  • 1 tsp. Salt
  • 1/2 cup ground almond meal
  • 1 large egg
  • 3/4 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour
  • Pecan Nuts 100g
  • 100g Cashel Blue cheese, crumbled

  2. Make the frangipane mix using this recipe: https://www.thespruceeats.com/frangipane-recipe-1375636
  3. Now that you have your Salted Caramel and your Frangipane made, first put a layer of your Salted Caramel into each pastry shell.
  4. Add the chunks of Cashel Blue cheese on top of the caramel.
  5. Next add a layer of the frangipane mix and smooth off the top of the pastry shells with a flat knife.
  6. Press in pecan nuts onto the top of the tartlet.
  7. Bake in the oven for 15-20 minutes until golden and bubbling.
