Inventive ways of using our blue cheeses

Vegetarian Beetroot Burger with Cashel Blue

Nothing goes better with a burger than blue cheese, if you ask us. And it doesn’t have to be a meat burger! For this recipe we’ve used a vegetarian, pre-made Beetroot Burger from Aldi, the sweetness of which goes really well with our creamy blue cheese. However you can use any pre-made vegetarian burger and this recipe will be sure to delight.

 

Sophie McCan prepared this in our farmhouse kitchen, and its a very simple recipe that is also a crowd pleaser. Mixing creme fraiche with Cashel Blue and Honey gives you the blue cheese taste with a whole extra creamy dimension, and makes a different burger experience than the usual melted cheese style.

 

  • Beetroot Burger (or any premade burger)
  • 50g Cashel Blue
  • 100g Creme fraiche
  • Honey
  • Lettuce, washed
  • Tomato, sliced
  • Cucumber, sliced
  • Burger bun
  1. Griddle both sides of the beetroot burger on a griddle pan, or fry in a frying pan.
  2. Mix the Cashel Blue Cheese with Creme Fraiche and a teaspoonful of honey.
  3. Toast the burger bun and assemble the burger: Salad first, then burger pattie, then Cashel Blue crème.
