Cashel Blue Organic

Cashel Blue Organic is a unique and intense Irish Farmhouse Cheese. Made seasonally, the milk comes from a single herd of mixed breed cows including, Rotbund, Montbeliard, Jersey, Norwegian Red and Friesian cows.
The Taste: Its sumptuous texture comes from slow ageing over many months. As it matures, the flavour deepens, offering a truly rewarding, melt in the mouth experience, savoury blue notes, a light salt edge and subtle hints of spice.
(Suitable for vegetarians and those who are sensitive to lactose.)

Crozier Blue

Crafted seasonally, in small batches, from 100% Irish ewe’s milk right here in our dairy. The amazingly rich milk is incredibly dense, resulting in a cheese with an exceptional texture. With a very limited number of milking sheep in Ireland, Crozier Blue is only available from cheese-counters. Typically, the cellars from one year run empty in March and we wait patiently for the new season’s release.
The Taste: Gently creamy when young (June to September) developing to a velvety fudgy smoothness as the season develops from October through to March.

Cashel Reserve Cheddar

Cashel Reserve Cheddar is an ageing project made locally from 100% Irish milk. It arrives in the Cashel maturing rooms in its youth and is tucked away carefully. We wait patiently for a bolder and more complex character to emerge, typically from 2 years of age.
The Taste: Firm yet creamy, with an occasional crystal if you’re lucky. A bold, complex character, that demands a moment of your time. It’s the ultimate partner for a glass of Cabernet Sauvignon or a crisp, dry cider and a dollop of red onion marmalade.

Shepherd's Store

This is our hard, aged sheep’s milk cheese. Matured a minimum of 9 months, each 4.5 kg wheel represents the milk of 20 sheep. If released at under 12 months it is milky sweet with crisp acidity, great for a summer salad. However, this cheese comes into its own at 18+ months, when it is, it has a round, fudgy and nutty flavour with a smooth texture. Enjoy it with an Aussie Shiraz (but not Barossa – too much vanilla). Or a crisp, hoppy IPA, if this is more your style.
The Taste: Naturally creamy with a more subtle and gentle spice profile compared to the blues. It offers a lush, smooth character, very moreish.

Toma No.5

This is our wonderful, semi-hard cow’s milk cheese, a true delight for those who appreciate the quiet complexity of traditional farmhouse craft. Crafted in small batches at our dairy using our own Friesian milk, Toma No. 5 has a lovely, supple character, offering a more mellow and buttery taste than our classic blues. It is a versatile companion on any board, making for great company with a glass of crisp Chardonnay or a nutty Craft Ale and a handful of orchard fruits.
The Taste: Naturally buttery with a gentle, earthy sweetness. It offers a smooth, elastic texture that melts beautifully on the tongue, truly moreish.
